A super simple quick recipe - just made up so not in the book. This is super easy and one that is so easy I hesitate posting such a basic recipe but after a few requests from friends and family, here it is. This one I did on spur of the moment, needing a fast meal at the end of a long work day.
Prep in large bowl: 1.5 T cornstarch mixed with 2 T low sodium soy sauce, 1 T dry sherry or rice wine 1.25 lb lean round steak preferably eye of round. Best to take out of freezer morning cooking and leave in fridge so partially frozen when sliced. Slice thin 1/8" slices and mix with cornstarch and soy sauce Prep in medium bowl: red pepper in small squares 2 handfuls of green beans with tips cut off then halved or third, use the FRENCH thin beans not fat ones half yellow pepper in small squares have onion sliced in small wedges and separated 2 cloves garlic, mashed hard with side of knife and chopped roughly 10-15 thai chilies (real thai ones not serranos as they are much better) sliced in small rings if you are feeling like some extra spice slice up 5 more and leave in small bowl at table to sprinkle over your plate... Sauce in a small bowl: 4 T low sodium soy sauce 2 tsp garlic chili paste (find in Asian aisle, it' bright red) Putting it all together... Get 1.5 cup rice cooking in rice cooker (I always prefer sticky Japanese rice for this though it is not authentic) Prep the vegetables then the meat and sauce per above and set aside. Heat wok with 2 T vegetable oil over high. Get it hot! Stir fry all vegetables for few minutes then remove to bowl they came from. Add 3 T oil to wok over med high now and stir fry beef until cooked through, return vegetables and toss well, dump in sauce and serve over rice. |
